Jardineira (Gardener)



Ingredients (4 people):


500g of beef for stewing

1 piece of sausage cut into slices

1 chopped onion

3 minced garlic cloves

1 can of peeled and chopped tomatoes

1 glass of white wine

1 tablespoon chili paste

2 bay leaves

1 sprig of parsley

1 sprig of rosemary

5 potatoes cut into cubes

2 carrots cut into cubes

20 small fresh mushrooms cut into quarters

1 cup of frozen peas

salt, black pepper and olive oil q.b.


Preparation


In a large pan put enough oil to cover the bottom and let it heat up a little. Add the onion and bay leaves and let it cook a little.

Add the sausage and let it fry slightly.

Add the tomato and let it braise some more.

Meanwhile, season the meat with salt and pepper.

Add the meat to the stew and let it color, stirring occasionally.

Drizzle the meat with the wine and add the red pepper paste, garlic, parsley, rosemary and a cup of water and cook until the meat is tender.

Note: during this process of cooking the meat, if necessary, add water so that it does not dry out.

When the meat is tender add 2 cups of water, the potatoes, the carrots and the peas and let it cook.

When the vegetables are almost cooked add the mushrooms and let them finish cooking.
