Solha na Frigideira (Plaice in the Frying Pan)



Ingredients: 4 plaice steaks 1 lemon 3 cloves of garlic 1 bunch of chopped parsley 6 chopped mint leaves 12 chopped basil leaves 1 Tablespoon of oregano 60 ml. of olive oil salt Pepper Preparation: Season the fish with salt and pepper. Cut the rind from half a lemon and place the rinds in the skillet along with 30 ml. of olive oil. Let the oil take on the lemon flavor until the oil starts to boil. Place the fish skin side down in the skillet and cook until the fish turns white and the skin is crispy. Separately, in a bowl, add the remaining oil. Grate the rest of the lemon and add it to the oil. Add the minced garlic and chopped herbs. When the fish is cooked, drizzle with this sauce and bring to a boil. Serve with mashed potatoes.
